    BAKED PASTA



Ingredients :

- Boiled pasta in salt  ( 1 cup )
- Mayonnaise (3 tbsp)
- Chilly flakes  ( 1 tsp)
- Garlic ( 1 chopped )
- Ketchup ( 3 tbsp )
- chopped  capsicum ( half )
- chopped tomato ( half )
- chopped onion ( half )
- Mozzarella cheese , cheddar and Parmesan cheese . ( 1 cup) 
- olive oil ( 2 tbsp)
- salt ( to taste)

METHOD :

In a pan take , olive oil , add the capsicum , tomatoes onions and garlic . saute for 2 minutes and add salt chilly flakes , and ketchup . Cook for a minute or two and switch off the flame , mix in the hot pasta and add mayonnaise . Mix well . Pour into a baking pan , cover with cheese and bake for 10 minutes in preheated oven at 300 F . Can also eat without baking ! Enjoy

HOT CHOCOLATE


INGREDIENTS :

- 11/2 cup whole milk
- 1/2 cup heavy cream
- 1/3 cup milk chocolate  chopped
- 1/2 cup bittersweet chocolate
- 1/4 tsp vanilla extract
- 1/2 tsp coffee powder
- 1 tbs sugar

METHOD :

- In a pan , add milk & cream. Cook together over medium heat until the mixture is almost at the boiling point but making sure not to let it boil .

- Take it off the heat  , and add both chocolates , sugar , vanilla, coffee. Let stir for one minute and whisk. Put the mixture back on the heat , to let it get a bit hot and serve with some whipped cream and chopped chocolate on top .

Upside down Plum cake Tatin


INGREDIENTS :


  • 6 tablespoons (3/4 stick) unsalted butter, at room temperature, plus extra for greasing the dish
  • 10 to 12 purple "prune" plums, cut in half and pitted
  • 1 3/4 cups granulated sugar, divided
  • 2 extra-large eggs, at room temperature
  • 1/3 cup sour cream
  • 1/2 teaspoon grated lemon zest
  • 1/2 teaspoon pure vanilla extract
  • 1 cup plus 2 tablespoons all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon kosher salt
  • Confectioners' sugar
PROCEDURE :
Preheat the oven to 350 degrees F. Generously butter a 9-inch glass pie dish and arrange the plums in the dish, cut side down.
Combine 1 cup of the granulated sugar and 1/3 cup water in a small saucepan and cook over high heat until it turns a warm amber color, about 360 degrees F on a candy thermometer. Swirl the pan but don't stir. Pour evenly over the plums.
Meanwhile, cream the 6 tablespoons of butter and the remaining 3/4 cup of granulated sugar in the bowl of an electric mixer fitted with the paddle attachment, until light and fluffy. Lower the speed and beat in the eggs one at a time. Add the sour cream, zest, and vanilla and mix until combined. Sift together the flour, baking powder, and salt and, with the mixer on low speed, add it to the butter mixture. Mix only until combined.
Pour the cake batter evenly over the plums and bake for 30 to 40 minutes, until a cake tester comes out clean. Cool for 15 minutes, then invert the cake onto a flat plate. If a plum sticks, ease it out and replace it in the design on top of the cake. Serve warm or at room temperature, dusted with confectioners  sugar


Spicy Grilled chicken !


Ingredients : (Serves 2 )

Chicken breast & chicken leg   - 4 small pieces each
Ginger Garlic paste - 2 tsp
Crushed green chillies  - 2
Curd  - 2 tbsp
Turmeric powder - 1/2 tsp
Chilly powder  - 1/2 tsp
Black pepper powder - 2 pinches
Meat / chicken masala - 1/2 tsp
Lemon juice - 1/2 tsp
Salt - acc to taste
Veg /Olive oil - 3 tbsp

Procedure :

Wash the chicken pieces and add all the ingredients except (only 2tbsp oil) and mix . Cover and keep in the fridge for minimum 4 hours and marinate. When its done take a baking tray , cover it with an aluminium foil and spray 1 tbsp oil , so that chicken doesnt stick. And lay the chicken spreading it evenly over the foil.
Grill for 15- 20 min at 350 F , or until chicken is tender and cooke.

Serve hot with green spicy chutney and sprinkle some onions n few drops of lemon juice .


Fruit Cream Recipe


Ingredients : (Serves - 2 people)

Heavy Cream - 1/2 cup
Vanilla extract /essence - 1/2 tsp
Sugar  - 1/2 cup
Fruits - Banana , mango , canned pineapple , cherries, strawberry, blueberry , rasberry . (avoid watery fruits)

PROCEDURE :

Add vanilla essence and sugar into the cream . Using a whisk , or electric mixer at low speed mix the cream  until fluffy. Make sure you dont mix for too long otherwise its gonna turn buttery. Mix the fruits and put in the fridge. Serve chilled !
